OUR FOOD
THE CHICKEN: SPCA-CERTIFIED;
HALAL & GLUTEN FREE
We use Tegel chickens, meaning our chicken is SPCA certified - NZ barn-raised with access to environmental enrichment, platforms for perching, and more space compared with non-SPCA certified systems. They are also HALAL.
We do not simply string the birds up and put them on the rotisserie. Firstly, we brine them in a salt and brown sugar solution overnight before trussing and seasoning them for one more sleepover. Do you know who isn't invited to the sleepover...? GLUTEN - our chickens are GLUTEN-FREE.
Now we're cooking with gas (literally)... after c. two hours on the rotisserie under the influence of Maillard (refer to our Chicken for Geeks page), the chicken is ready for you.
THE ROAST POTATOES: NO SEED OIL & GLUTEN FREE; CONTAIN CHICKEN FAT!
Waste not want not, we harvest the fat from cooking your chickens and roast your potatoes in it. Nothing else. No seed oils, no Acidity Regulator WaltodextrinTF does this stuff even mean; just some salt to season them for your eating pleasure.
THE SALADS: DAIRY & GLUTEN FREE

WHY
The People.
We are not driven by passion for chicken, a love of locally sourced ingredients, or a dedication to organic food.
We strive for them where we can, but primarily we are motivated by reality: New Zealand produces enough food for 8x its population and yet 1-in-4 kids lives in food insecurity with poor access to the nutrition required for their development.
This is a national scandal we cannot abide. It is a problem that we alone cannot solve. But we CAN make a start.
This means building a value based proposition from the ground up. It means transparency. It means resisting the allure of 'Great' as not to kill 'Good' e.g., free range organic would be great!... for those who can afford it.
Because we are about Chicken for the People, not the few.
